Thanks to cramped quarters and a lack of specialized appliances, cooking while touring the country in an RV can become claustrophobic and repetitive. There’s typically only enough space for essential cookware, and RVers often opt to ditch fresh produce for processed and boxed food that will last. So how do you keep things interesting and healthy?

To break the monotony of oven-baked pastas, grilled meats, and sandwich concoctions, here are five creative low-cost recipes you should try out the next time you hit the road in your RV.

    We love our crock pot dinners, especially when we're on the road. We put the crock pot in the sink so it won't slide around, then add our favorite receipe from the cook book. "Chicken Lickin' Pork Chops" uses cream of chicken soup, water and rice. It is best of you flour and season the chops ahead and quickly brown them before putting them in the pot. After about three hours on the road the great aroma starts making us hungry which assures that we don't drive too long!
